Stuffed Tomatoes
Ingredients:
8 medium-size tomatoes
1 lb. ground chicken meat
5 oz. mushrooms
1 bunch of parsley
salt, pepper to taste
1 tbsp. oil
1 small onion
1 egg
2 oz. butter or margarine
1.Wash the tomatoes and cut off the top part near the stem,
carefully squeeze out the inside into a bowl, and set aside.
Cook the finely chopped onion in the oil until transparent,
add the ground meat, the sliced mushrooms and cook under a lid
until the juices are gone. Remove it, let cool it, then add
the raw egg, half of the finely chopped parsley, salt, pepper
and combine thoroughly.
2.Fill the tomatoes with the stuffing, carefully
place in a buttered ovenproof dish, sieve the the squeezed out
tomato-insides, pour on top, sprinkle with sour cream and cook
in a pre-heated oven for approx. 30 minute. Serve hot,
decorated with the remaining parsley.
