Stuffed Fried Mushrooms
Ingredients
( 6-8 servings ):
10-12 green peppers
mushrooms
salt
1 tsp. lemon juice
Stuffing :
1 tbsp. oil
1 small onion
1 lb. ground veal
1 egg
1 bunch parsley
salt, pepper
1 tsp. pepper
For
Frying
7. oz. oil
2 eggs
7 oz. bread crumbs
oil
1. Wash ( do not ) peel the mushrooms and break off the
stems. Cut the stems into small pieces lengthwise and set
aside. Cook the caps in lightly salted lemon-water for 10
minutes.
2. Fry the finely chopped onion in oil until transparent,
add the ground meat. the mushroom stems and cook until liquid
has evaporated. Transfer to a large dish, let cool, add the
egg, the finely chopped parsley, salt, pepper and a little bit
of bread crumbs to make a thick stuffing.
3.Wipe dry the cooked mushroom caps, stuff with the veal
mixture and carefully roll first in flour, then the whipped
egg and the breadcrumbs.
4. Cook in ample hot oil until light brown and put on a
paper towel to absorb the oil.
