Fried Goose Liver
Ingredients
( 6-8 servings ):
1 goose liver at least 1lb.
2 cups milk
salt
pepper
1 lb. goose fat
1.Soak the goose liver in lightly salted milk for at least
1 hour. Melt the goose fat, add liver (without the milk), pour
in 1/2 cup water and cook covered over low heat until the
cooking liquid has evaporated.
2.Take the liver from the dish let cool and slice. If you
want to serve the liver cold, put it in the refrigerator
whole, let it cool then cut into paper thin slices.
3.Fried goose liver is delicious without any seasoning, but
some people prefer to add a clove of garlic or a small head of
red onion while the liver is cooking.
