Stuffed Peppers
Ingredients:
8 fresh bell peppers
1 lb. ground pork
2 oz. rice
1 garlic
1 egg
salt, pepper to taste
1 tbsp. oil
7 oz. tomato puree
1 tbsp. powdered sugar
1.Cook the rice half way in slightly salted water.
2.Wash and core peppers. Place the ground meat in a bowl, add
garlic drained rice, egg, salt and pepper to taste and work
thoroughly together.
3.Stuff the peppers with the mixture. Make small meatballs
from the remaining stuffing.
4. In a large pot prepare roux with oil and flour, cooking the
flour until light brown, then quickly add 1 1/3 cup of water,
stirring constantly until smooth. Add tomato puree and enough
water to make approx. 1 quart. Stir well add salt and sugar,
stuffed peppers, meatballs, bring to boil then continue
cooking on a very low heat until done. (approx.30-40 minutes)
You may want to add more sugar, then serve with boiled
potatoes.
