Plum dumplings
Ingredients:
1 1/4 lb. potatoes
1 1/4 lb. plums
2 tbsp. cinnamon sugar
approx. 8 oz. flour
salt
1 egg
1 clump butter
Fried Breadcrumbs:
2 tbsp. oil or butter
3 1/2 oz. breadcrumbs
1 tbsp. powdered sugar
1.Cook the potatoes in their skin. Peel and rice them while
still warm. Set aside to cool.
2. Cut open the plums, remove the pits and if they're not
fully mature or sweet enough, stuff with a bit of sugar or
cinnamon sugar. (mixed sugar and cinnamon) . Mix potatoes with
flour, butter or oil, egg, salt and kneed it well. ( Add
enough flour to make a light, but not runny dough.)
3. Stretch the dough out to 1/2 in. thickness on a floured
board, then cut into approx. 3 in. squares. Place a plum in
the middle of each square, flour your hands, pull the corners
together and form a little ball, until each plum is completely
covered and there are no openings.
4. Cook in boiling water until the dumplings rise to the
surface, then continue cooking for another 3-4 minutes. Remove
with slotted spoon.
5. Brown the bread crumbs in the oil or melted butter till
golden brown, place the dumplings one at a time carefully into
the bread crumbs and roll them around to coat. remove the
dumplings and serve with powdered sugar.
These dumplings can also be made with prunes , prune jam,
frozen plums, apricots or sweet greengages.
