Pike/Perch with Mushrooms
Ingredients:
8 slices pike-perch (or other large fish)
14. oz. mushrooms
3 1/2 oz. butter
1 tsp.corn starch
1/2 cup heavy cream
1.Salt the fish and cook in hot oil on both sides until
reddish brown (crisp). Carefully remove the fish from pan, set
aside and keep hot.
2.Fry the sliced mushrooms in the pan with the remaining
liquid, then cook, covered, until tender.
3.Combine the corn starch with a bit of water add to the
hot mushrooms in their liquid, stir for a minute, add the sour
cream stir again and pour over the fish. minute.
4.Serve hot with boiled potatoes or flat noodles.
