Chicken Paprikas with galuska (small
dumplings)
Ingredients:
1 large chicken
1 tsp. paprika
1 green pepper
1 tomato
salt to taste
1 tbsp. oil
1 onion
2-21/4 cup sour cream
1 tsp. flour
For the
galuska:
2 eggs
salt
10 oz. flour
1tbsp. oil
1.Clean and cut the chicken into desired pieces. Fry the
finely chopped or grated onion in the oil until transparent,
remove sprinkle with paprika, put back on the stove add
chicken green peppers cut into rings., tomatoes peeled and
quartered and cook covered in its own juice until tender.
2. Prepare the galuska (small dumplings). Beat the eggs,
add salt, flour, oil and enough water to make a semi-soft
dough. Boil ample salted water in a large pot and using using
either a special made utensil for making dumplings or a
dampened chopping board and a wet knife , 'cut' small pieces
of dough into the boiling water. ( the size can vary from
small kidney beans to an unshelled peanut, but remember
that the dough will swell in size.) Cook until galuska comes
to the surface of the water , remove with a slotted spoon,
rinse and place into hot oil. Stir vigorously over a high
heat, take from the oven and keep warm.
3. Combine the 1 tbsp. flour with 1-2 tbsp. milk until
smooth, add a bit of water, combine then stirring
constantly, add to the chicken and bring to boil.
4. Serve hot with the galuska and the remaining sour cream
in a separate bowl. Lettuce-, cucumber salad or pickles go
well with this dish.
