Cheese dumplings

Ingredients:
  1 lb. dry cottage cheese, pot cheese or farmers' cheese    4 oz. semolina    1 tbsp. melted butter  salt  3 eggs    

Fried Breadcrumbs:

2 tbsp. oil or 2 oz. butter 3 1/2 oz. breadcrumbs 1 1/2 cups sour cream   powdered vanilla sugar

1.Force the cheese through a sieve. Combine with the eggs, semolina, melted butter, salt to taste and let stand for at least 1 hour. 

2. Wet your hands and shape the cheese mixture into small balls (approx. 1 tbsp. per ball). Drop into salted boiling water and cook for 15-20 minutes. Because s3emolina is different in every country, test cook one dumpling for 5 minutes. If the dumpling is too soft, add a bit more semolina. When done, remove with a slotted spoon and set aside.

3. To make the coating, brown bread crumbs in the oil until golden brown, ad the dumplings (balls) and roll to cover them. Transfer to a serving platter. Sprinkle with half of the heated up sour cream. Serve with the rest of the sour cream and vanilla sugar in a separate bowl.
